A diversity of flavors and colors await you in your CSA bags this week. Except for the eggplant, all the other items in the bag are great eaten fresh with little or no preparation. This comes just in time given these days we don’t want to turn on the oven or light the stove and potlucks seem to be as frequent as chigger bites.
This week we’ve added cantaloupe! Yours could be in any stage of “ready-to-eat.” Please be sure to check it out as soon as you receive your bag so you can take advantage of your cantaloup’s ripeness! The cantaloupe will also continue to ripen off the vine so if you find yours not to your desired taste, set it in your refrigerator for another day or two until it softens up.
The tomatoes are practically leaping off the vines asking to be made into salsa. Chop them into small pieces and add finely chopped cilantro or basil. If you have onions and garlic leftover from last week’s bag, add them too! Heck, I’ve even been thinking about cantaloupe salsa recipes. Here’s one I found online that sounds great. Experiment for yourself and let us know how it goes!
