Today is the first pick-up for the Tuesday Summer CSA at Chapel Hill Farmers’ Market located at University Mall. Pick-ups are from 3 until 6 pm. We’ve been busy transitioning from Spring crops to Summer crops in the field. The tomatoes are looking pretty good, though we are still a couple of weeks away from having the quantities we need to put them in your bags. Next will be eggplant and then the peppers, and we have lots of great varieties of those this year. But back to right now…
In Your Bags:
Yellow Squash and one or two Zucchinis
Pickling Cukes–sweet and crispy, great for snacking, even the peels aren’t bitter
Spinach–harvested whole plants. We already washed it, but you’ll need to remove stems
Beets–great for roasting with some of the onions below
Fresh small onions–not cured so eat them soonish
We’ve been enjoying a great, refreshing dip with all of our cucumbers. It is a perfect addition to the next potluck!
Benedictine
5-6 little cukes, peeled or not if you don’t mind peelings
2 tbs grated onion
1/4 tsp salt
8 oz cream cheese, softened
A little garlic
Combine cukes and onion in food processor, then drain and put back in processor with remaining ingredients until well blended. Great on crackers or bread!
