What’s In The Bag, Tuesday, June 19

Today is the first pick-up for the Tuesday Summer CSA at Chapel Hill Farmers’ Market located at University Mall. Pick-ups are from 3 until 6 pm. We’ve been busy transitioning from Spring crops to Summer crops in the field. The tomatoes are looking pretty good, though we are still a couple of weeks away from having the quantities we need to put them in your bags. Next will be eggplant and then the peppers, and we have lots of great varieties of those this year. But back to right now…
In Your Bags:
Yellow Squash and one or two Zucchinis
Pickling Cukes–sweet and crispy, great for snacking, even the peels aren’t bitter

Spinach–harvested whole plants. We already washed it, but you’ll need to remove stems
Beets–great for roasting with some of the onions below

Fresh small onions–not cured so eat them soonish
We’ve been enjoying a great, refreshing dip with all of our cucumbers. It is a perfect addition to the next potluck!
Benedictine
5-6 little cukes, peeled or not if you don’t mind peelings
2 tbs grated onion
1/4 tsp salt
8 oz cream cheese, softened
A little garlic
Combine cukes and onion in food processor, then drain and put back in processor with remaining ingredients until well blended. Great on crackers or bread!

What’s In The Bag, Tuesday, May 29

The weather seems to know lately when to hold off on the rain and when to give us a little shower. A swift fly-by pour passed through our farm yesterday afternoon, but not until all the sweaty work was completed by our AMAZING team at the work party (see previous post).  And despite a few light showers overnight, we greeted the morning with a golden sun at her side so that we could harvest all the goodies for our Tuesday flock’s CSA bags. Looks like we’ll experience more rain before the week is over…

We’re approaching the tail end of our Spring CSA Session! Can you believe it? Don’t forget to register for the Summer Session so that you can continue to support your local farmers, the earth, and your health. What’s In The Bag:
* Baby Beets
* Squash and Zucchini medley
* Pickling Cucumbers
* Chard
* Kale
* Broccoli
* Fennel

The Baby Beets are various marble sizes – perfect for roasting in the oven! Fennel is also great roasted in the oven or grilled. Chop off the green tops of the fennel and slice the bulb in half vertically. To oven roast, place in a glass dish, drizzle a little olive oil and salt, and bake at 375 until tender. Over a flame on a grill, lightly rub the fennel with olive oil and cook until tender and slightly charred.
